Here’s a quick and easy way to use up those farmer’s market tomatoes (or your own). No greens necessary for this salad—just slice up your tomatoes and pair them with ripe sliced peaches and a sweet honey vinaigrette.
Ingredients
- 4 whole Medium Heirloom Tomatoes
- 2 whole Large Ripe Peaches
- ⅛ teaspoons Salt
- ⅛ teaspoons Pepper
- 1 Tablespoon Extra Virgin Olive Oil
- 2 teaspoons White Wine Vinegar
- 1 Tablespoon Honey
- ¼ teaspoons Basil For Presentation, Optional

- ⅛ teaspoons Salt
- ⅛ teaspoons Pepper
- 1 Tablespoon Extra Virgin Olive Oil

Preparation
Slice tomatoes and distribute evenly across 4 plates. Pit and slice peaches and do the same across all 4 plates. Sprinkle with the salt and pepper.
In a small bowl, combine the oil, vinegar and honey and mix. Drizzle over each plate and top with basil if desired.
