Herbed Goat Cheese Toasts with Balsamic Roasted Sweet Peppers

A delicious way to use up leftover fresh herbs! Also a quick and easy snack!

Ingredients

  • FOR THE HERB GOAT CHEESE:
  • 5 ounces, weight Goat Cheese, Softened At Room Temperature
  • 1 Tablespoon Chopped Chives
  • 1 Tablespoon Chopped Parsley
  • 1 Tablespoon Chopped Dill
  • 1 Tablespoon Chopped Basil
  • ½ teaspoons Minced Garlic
  • 1 pinch Salt
  • FOR THE TOASTS:
  • 1 loaf Of Your Favorite Crusty French Bread, Gluten Free Or Regular
  • Olive Oil For Drizzling On Bread
  • 1 clove Garlic, Peeled
  • 1 bag (16 Oz. Size) Fresh Mini Sweet Peppers
  • 1-½ teaspoon Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 1 pinch Salt

  • 2 Tablespoons Balsamic Vinegar

Preparation

1. In a small bowl, add all of the herb goat cheese ingredients and mix together. Set aside.
Preheat the oven to 375 F. Cut the bread into slices (mine were about 3/4 to 1 inch thick) and drizzle with olive oil. Place the slices onto a large baking sheet and place in the oven for about 10 – 15 minutes, flipping once. After bread is toasted, rub one side with the raw clove of garlic.

2. Increase the oven temperature to 400 F. Wash the peppers, remove the stem and any seeds and cut them into thin slices. On a large rimmed baking sheet, lined with parchment paper, add the pepper slices, olive oil, balsamic vinegar, and salt. Toss to coat, spread them in a single layer and place pan into the oven. Roast for about 30 minutes, or until peppers are soft and caramelized.

3. Spread about 1 tablespoon of herb goat cheese spread onto each slice of bread and top with balsamic roasted peppers.
