Mini Frozen Cheesecake Cups

Only 50 calories each! Perfect treat to have in the freezer at all times—quick and simple to make!

Ingredients

  • 1 piece (1 Oz. Size) Sugar Free Dark Chocolate Bites (I Use Amber Lyn Chocolates)
  • 6 pieces Athens Mini Phyllo Shells(from The Freezer Section That Come Prebaked)
  • 2-⅔ ounces, weight Fat-free Cream Cheese
  • 1-⅞ ounces, weight Fat-free Cool Whip
  • 2 packages (Individual Size Packets) Stevia
  • ¼ teaspoons Pure Vanilla Extract
  • 6 whole Fresh/frozen Raspberries
  • 1 piece (1 Oz. Size) Sugar Free Dark Chocolate Bites (I Use Amber Lyn Chocolates)
  • 6 pieces Athens Mini Phyllo Shells(from The Freezer Section That Come Prebaked)
  • 2-⅔ ounces, weight Fat-free Cream Cheese
  • 1-⅞ ounces, weight Fat-free Cool Whip
  • 2 packages (Individual Size Packets) Stevia
  • ¼ teaspoons Pure Vanilla Extract
  • 6 whole Fresh/frozen Raspberries

Preparation

Melt the dark chocolate square for about 20 seconds in the microwave in a small dish. Dip the tops of the phyllo shells in the chocolate, set them on a plate and place it in the freezer to set. Mix together the cream cheese, Cool Whip, stevia and vanilla in a small bowl until well combined. Spoon into cups, add a berry to the top and place back in the freezer for at least 2 hours. Enjoy!
