Peanut Butter & Oat Energy Balls

These delicious peanut butter and oat energy balls are the perfect healthy snack. Simple to make and so tasty!

Ingredients

  • 2 cups Oats
  • 2 Tablespoons Chia Seeds
  • 2 Tablespoons Flaxseed
  • ½ teaspoons Vanilla Powder
  • ½ cups Organic Peanut Butter
  • 3 Tablespoons Coconut Butter
  • 1 Tablespoon Maple Syrup
  • ½ cups Medjool Dates (pitted)
  • 2 cups Oats
  • 2 Tablespoons Chia Seeds
  • 2 Tablespoons Flaxseed
  • ½ teaspoons Vanilla Powder
  • ½ cups Organic Peanut Butter
  • 3 Tablespoons Coconut Butter
  • 1 Tablespoon Maple Syrup
  • ½ cups Medjool Dates (pitted)

Preparation

1. Add oats, chia seeds. flax seeds and vanilla to a mixing bowl. Set aside.
2. Add peanut butter, coconut butter and maple syrup to a saucepan and melt on a low heat until smooth and runny.
3. Pour liquid into the dry ingredients and mix until all the oats are coated with the liquid.
4. Add dates to a food processor and mix until broken into smaller pieces.
5. Add the rest of the ingredients (oat mixture) into the food processor with the dates and mix well until combined.
6. Roll into your preferred size balls and store in the freezer.
