Tomato Onion Salad

Description

This is a refreshing salad, perfect for those hot summer days, especially when tomatoes are at their best. You can also add crisp cucumbers if you wish and top it off with some feta cheese to turn it into a Greek salad!

Ingredients

  • 4 whole Tomatoes
  • 1 whole Red Onion
  • ¼ bunches Parsley
  • ¼ cups Extra Virgin Olive Oil
  • 1 whole Lemon, Juiced
  • 1 pinch Salt
  • 1 whole Jalapeño, Stem And Seeds Removed And Chopped, Optional
  • 4 whole Tomatoes
  • 1 whole Red Onion
  • ¼ bunches Parsley
  • ¼ cups Extra Virgin Olive Oil
  • 1 whole Lemon, Juiced
  • 1 pinch Salt
  • 1 whole Jalapeño, Stem And Seeds Removed And Chopped, Optional

Preparation

Wash and chop the tomatoes. Thinly slice the onion. Put the onions and tomatoes in a bowl. Chop less than a handful of parsley and sprinkle it on top. Drizzle olive oil and lemon juice over the top, then mix. Add salt to taste. Add the chopped jalapenos, if desired, then mix.
