Description
A lovely salad from the Basque Country in Spain. A wonderfully refreshing use of the abundance of summer.
Ingredients
- 1 Cucumber, Peeled And Cut Into Cubes
- 2 Tomatoes, Cut Into Eighths And Then Halved
- 1 Green Pepper, Cut Into 1-inch Pieces
- 1 Small Onion
- 6 Tablespoons Olive Oil
- 3 Tablespoons Red Wine Vinegar
- ½ teaspoons Sugar
- Salt To Taste
- Freshly Ground Black Pepper

Preparation
Mix all the ingredients together. Refrigerate for at least 30 minutes before serving.
