Description

A lovely salad from the Basque Country in Spain. A wonderfully refreshing use of the abundance of summer.

Ingredients

  • 1  Cucumber, Peeled And Cut Into Cubes
  • 2  Tomatoes, Cut Into Eighths And Then Halved
  • 1  Green Pepper, Cut Into 1-inch Pieces
  • 1  Small Onion
  • 6 Tablespoons Olive Oil
  • 3 Tablespoons Red Wine Vinegar
  • ½ teaspoons Sugar
  • Salt To Taste
  • Freshly Ground Black Pepper
  • 1  Cucumber, Peeled And Cut Into Cubes
  • 2  Tomatoes, Cut Into Eighths And Then Halved
  • 1  Green Pepper, Cut Into 1-inch Pieces
  • 1  Small Onion
  • 6 Tablespoons Olive Oil

Preparation

Mix all the ingredients together. Refrigerate for at least 30 minutes before serving.
