No-Bake Biscoff Cookies

Need some back to school snack ideas? I give you this new take on no-bake cookies featuring delicious Biscoff Spread.

Ingredients

  • 8 Tablespoons Unsalted Butter
  • 1-½ cup Packed Light Brown Sugar
  • ½ cups Milk
  • ½ teaspoons Fine Salt
  • ½ teaspoons Ground Cinnamon
  • ¾ cups Biscoff Spread
  • 1 teaspoon Pure Vanilla Extract
  • 2-½ cups Rolled Oats
  • 8 Tablespoons Unsalted Butter
  • 1-½ cup Packed Light Brown Sugar
  • ½ cups Milk
  • ½ teaspoons Fine Salt
  • ½ teaspoons Ground Cinnamon
  • ¾ cups Biscoff Spread
  • 1 teaspoon Pure Vanilla Extract
  • 2-½ cups Rolled Oats

Preparation

In a medium, non-stick saucepan, melt butter over medium heat. Add light brown sugar, milk, salt, and cinnamon. Increase heat to high and whisk with a nylon or silicone whisk until the sugar is completely dissolved. Stop whisking and allow mixture to come to a full boil; boil for 1 minute.

Remove from heat and whisk in Biscoff and vanilla until smooth. Stir in rolled oats. Use a #50 scoop to portion cookies onto silicone or parchment lined cookie sheets. Allow to cool completely.

Notes:
1. Makes about 30 cookies.
2. Biscoff Spread is a creamy treat made from Biscoff Cookies. You’ll typically find in the store where you find nut butters and chocolate spreads.
