Description
Smoked chicken and mache salad with apples, peanuts, feta cheese, green olives, and raspberry vinaigrette.
Ingredients
- FOR THE DRESSING:
- ½ cups Fresh Raspberries
- ¼ cups Extra Virgin Olive Oil
- 2 Tablespoons Fresh Lemon Juice
- 1 Tablespoon Honey
- ½ teaspoons Kosher Salt
- ¼ teaspoons Freshly Ground Black Pepper
- FOR THE SALAD:
- 4 cups Mache Leaves
- 1 cup Shredded Smoked Chicken
- 2 whole Roma Tomatoes, Seeded And Diced
- 1 whole Granny Smith Apple Cored And Diced
- ½ cups Crumbled Feta Cheese
- ½ cups Peanuts
- ¼ cups Pitted Green Olives, Thinly Sliced
- 3 whole Scallions, Thinly Sliced
- FOR THE DRESSING:
- ½ cups Fresh Raspberries

Preparation
For the dressing:
Combine the raspberries, olive oil, lemon juice, and honey in a blender and mix until smooth. Season with salt and pepper, to taste.
For the salad:
Toss together the mache, chicken, tomatoes, apples, feta, peanuts, olives, and scallions in a large serving bowl. Drizzle the dressing over the top and toss to coat.
