Turkey Carrot Meatloaf

Description

My husband’s recipe for a lighter turkey meatloaf, sweetened with grated carrots. The leftovers make amazing meatloaf sandwiches!

Ingredients

  • FOR THE MEATLOAF:
  • 1 pound Ground Turkey
  • 1 cup Grated Carrots
  • 1 cup Finely Diced Onions
  • 1 whole Egg
  • ½ cups Breadcrumbs
  • 1 clove Garlic, Minced
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 2 Tablespoons Ketchup
  • FOR THE GLAZE:
  • 1 teaspoon Ground Mustard
  • 1 teaspoon Brown Sugar
  • 1 Tablespoon Ketchup
  • FOR THE MEATLOAF:
  • 1 pound Ground Turkey
  • 1 cup Grated Carrots
  • 1 cup Finely Diced Onions
  • 1 whole Egg
  • ½ cups Breadcrumbs
  • 1 clove Garlic, Minced
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 2 Tablespoons Ketchup
  • FOR THE GLAZE:
  • 1 teaspoon Ground Mustard
  • 1 teaspoon Brown Sugar
  • 1 Tablespoon Ketchup

Preparation

Preheat oven to 350 F. Prep a rimmed baking sheet with non-stick spray.

Combine all the meatloaf ingredients in a large bowl. Mix thoroughly with your (clean) hands. Place mixture on baking sheet in a loaf shape.

To make the sauce mix ground mustard, brown sugar and ketchup in a small dish. Spread the sauce of the the top of the meatloaf.

Bake for 50 minutes, or until cooked thoroughly. Enjoy!
