Peanut Butter Cookies (Gluten-Free, Sugar-Free)

Description

Melt-in-your-mouth, delicious peanut butter cookie! Naturally sweetened with dates.

Ingredients

  • 1 cup Almond Flour
  • ½ teaspoons Sea Salt
  • ¼ teaspoons Baking Soda
  • 4  Large, Pitted Dates
  • ¼ cups Water
  • ½ cups All Natural Peanut Butter
  • 2 Tablespoons Coconut Oil, Melted
  • 1 teaspoon Vanilla Extract
  • 1 cup Almond Flour
  • ½ teaspoons Sea Salt
  • ¼ teaspoons Baking Soda
  • 4  Large, Pitted Dates
  • ¼ cups Water
  • ½ cups All Natural Peanut Butter
  • 2 Tablespoons Coconut Oil, Melted
  • 1 teaspoon Vanilla Extract

Preparation

1. In a small bowl, combine almond flour, salt, and baking soda.
2. In a food processor, combine the dates and water until a syrup-like texture is formed.
3. Once syrup consistency has formed, add peanut butter, coconut oil, and vanilla and pulse until well combined.
4. Slowly add the dry ingredients to the food processor. Process until all ingredients are well combined.
5. Scoop dough 1 tablespoon at a time onto a parchment-lined baking sheet.
6. Use a fork to make a criss-cross pattern.
7. Bake at 350ºF for 6–10 minutes or until the edges are golden.

Makes 12 cookies.
