Kimchi and Pineapple Grilled Cheese

Description

Happy National Grilled Cheese Day! Here is a mouth-watering combination of sweet and spicy trapped between melty mozzarella and toasted bread.

Ingredients

  • ⅓ cups Kimchi
  • ⅓ cups Cubed Pineapple Chunks
  • 2 slices Bread
  • 1 Tablespoon Butter
  • 2 ounces, weight Grated Mozzarella Cheese
  • ⅓ cups Kimchi
  • ⅓ cups Cubed Pineapple Chunks
  • 2 slices Bread
  • 1 Tablespoon Butter
  • 2 ounces, weight Grated Mozzarella Cheese

Preparation

Heat a skillet on medium-low heat. Toss the kimchi and pineapple into the skillet and warm it for approximately 5 minutes. Remove the mixture from the skillet and set aside.

Butter one side of each slice of bread (1/2 tablespoon each slice). Spread half of the cheese on the bottom slice (on the non-buttered side). Scoop the kimchi and pineapple onto the sandwich (on top of the bottom layer of cheese). Spread the rest of the cheese on top of the kimchi and pineapple. Close the sandwich with the top slice of bread (buttered side facing up).

Press down to secure the ingredients as much as you can, and place in the skillet on moderate heat. Grill until golden brown on both sides, approximately 4 minutes a side.
