These healthy Whole Wheat Waffles with Strawberries and Toasted Almonds are perfect for Mother’s Day or any brunch celebration.

Ingredients

  • 1 cup Rolled Oats
  • 1 cup Whole Wheat Flour
  • 2 Tablespoons Ground Flaxseed
  • 4 teaspoons Baking Soda
  • ½ teaspoons Pumpkin Pie Spice
  • ½ teaspoons Salt
  • 2  Eggs, Separated
  • 1-½ cup Skim Milk Or Almond Milk
  • ½ cups Mashed Banana
  • 2 Tablespoons Canola Oil
  • Toasted Almonds, Berries, And Maple Syrup, For Topping
  • 1 cup Rolled Oats
  • 1 cup Whole Wheat Flour
  • 2 Tablespoons Ground Flaxseed
  • 4 teaspoons Baking Soda
  • ½ teaspoons Pumpkin Pie Spice
  • ½ teaspoons Salt
  • 2  Eggs, Separated
  • 1-½ cup Skim Milk Or Almond Milk
  • ½ cups Mashed Banana
  • 2 Tablespoons Canola Oil
  • Toasted Almonds, Berries, And Maple Syrup, For Topping

Preparation

Grind rolled oats into a fine powder using a blender or a coffee grinder. In a large bowl, combine ground rolled oats, whole wheat flour, ground flaxseed, baking powder, pumpkin spice, and salt. Blend well with a whisk.

In another bowl, mix egg yolks, milk, banana, and oil. In a third bowl, beat egg whites for 1–2 minutes until stiff peaks form.

Mix egg yolk mixture into dry ingredients. Gently fold in beaten egg whites.

Cook in a waffle iron, according to waffle iron directions. You’ll want somewhere between ⅓ – ⅔ cup of batter in each waffle.

Top with toasted almonds, berries, and maple syrup.
