- 4 medium firm, crisp apples (about 1 3/4 pounds), such as Braeburn or Honeycrisp
- 2 tablespoons extra-virgin olive oil
- 1 large shallot, finely chopped
- 1 large clove garlic, finely chopped
- 2 tablespoons brandy or apple cider
- 1 teaspoon dried rubbed sage
- 1 teaspoon poultry seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 8 ounces 93%-lean ground turkey
