Description

These Green Goddess Fajitas are paleo, plant-based, and super yum! Drizzle with peppered olive oil or top with your favorite veggie or avocado dip.

Ingredients

  • 6 leaves Butterhead Lettuce (the Larger, The Better)
  • 9 pieces Fresh Kale
  • 5 slices Cucumbers, Halved
  • 3 slices Red Onion, Halved (see Photo)
  • 1  Tomatillos, Thinly Sliced
  • ½  Avocado, diced
  • 2 Tablespoons Olive Oil
  • Sea Salt And Cracked Pepper

Preparation

For each fajita, overlap 2 lettuce leaves (stemmed ends overlapping) and top with 2-3 kale pieces. Add 3 cucumber halves, 2 sliced onion halves, 1-2 tomatillo slices, and 2-3 tablespoons diced avocado.

In a separate jar, combine olive oil, salt, and pepper. Drizzle lightly over each fajita.

Serve immediately. Add more pepper as desired.
