Potato Pale Ale Beer Cheese Soup

Have a little beer with your soup in this potato pale ale beer cheese soup!

Ingredients

  • 6 whole Medium-sized Yukon Gold Potatoes, Peeled And Quartered
  • ½ cups Whole Milk
  • 2 Tablespoons Unsalted Butter
  • 4 cups Vegetable Or Chicken Broth (or Stock)
  • ½ teaspoons Cayenne Pepper
  • 1 Tablespoon Honey (optional - More Or Less To Taste)
  • 1-½ cup Pale Ale Beer (use A Pilsner For A Less Bitter Taste)
  • ¼ cups Cornstarch
  • 1 cup Heavy Cream
  • 1-½ cup Sharp White Cheddar Cheese, Grated (plus Extra For Garnish)
  • 4 strips Bacon, Cooked Until Crisp
  • 1 cup Micro Greens
  • Salt And Black Pepper To Taste

Preparation

Note you’ll also need inactive chilling time of 1 hour.

Add the quartered potatoes to a large stock pot. Add just enough water so that the potatoes are just submerged. Season generously with salt. Bring the pot to a rolling boil and cook the potatoes until fork tender, about 10-12 minutes. Drain and return potatoes to the pot.

Add the milk and butter to the potatoes and mash with a potato masher, hand-held mixer or stand mixer. You want the potatoes to be completely pulverized. No lumps should remain. If you need to add more milk, feel free. Season with salt and black pepper as desired. Place in the fridge to chill for at least an hour.

Into a large Dutch oven, add the chilled mashed potatoes and the broth or stock. Stir to completely combine. This may take a couple of minutes. Season with salt, black pepper and cayenne pepper. Heat over medium-high heat and cook for 15 minutes, stirring occasionally. At this point, add the honey if you have trouble with the bitter taste you tend to get when drinking a beer. This soup is very bitter, so add honey to your desired amount.

In a bowl, whisk together the beer and cornstarch. Add it to the pot, along with the heavy cream. Cook for an additional 15 minutes or until the soup has thickened substantially. Reduce the heat to low, and add the cheese, in 1/4 cup increments. Stir to melt cheese after each addition.

Keep the pot on low heat, covered, until you are ready to serve. Garnish with bacon, micro greens and additional cheddar cheese. Enjoy warm!

Notes:
1. Yes, the mashed potatoes may be made ahead of time, up to a week, and stored in an airtight container in the refrigerator.
2. This soup is very bitter from the hops in the beer. Using a pilsner, instead of a pale ale, will tone down the bitterness of the soup, but not completely. If you are looking for some sweetness, add more honey or granulated sugar in teaspoon-sized increments until you reach the sweetness you desire.

Bakery-style blueberry streusel muffins. Loaded with fresh blueberries and sour cream for extra moist muffins.

Ingredients

  • FOR THE MUFFINS:
  • 2 cups All-purpose Flour
  • ½ cups Brown Sugar
  • ¼ teaspoons Salt
  • 1 Tablespoon Baking Powder
  • 1-¼ cup Sour Cream
  • 1 teaspoon Vanilla Extract
  • ¼ cups Vegetable Oil
  • 1 whole Large Egg
  • 1-½ cup Blueberries
  • FOR THE STREUSEL TOPPING:
  • 3 Tablespoons Butter, Melted
  • ¾ cups Brown Sugar
  • ½ cups Flour
  • ½ teaspoons Cinnamon
  • FOR THE MUFFINS:

  • ½ cups Brown Sugar
  • ¼ teaspoons Salt
  • 1 Tablespoon Baking Powder

Preparation

Preheat oven to 400 F.

Add flour, brown sugar, salt and baking powder to a large bowl.

In a medium bowl add sour cream, vanilla, vegetable oil and egg. Whisk to combine. Add egg mixture into the dry ingredients. Fold gently. Do not over mix. Fold in blueberries.

Scoop batter into a muffin pan lined with baking cups (recipe makes about 14 muffins so you may need 2 pans). Fill liners almost all the way full.

Sprinkle each muffin with streusel (instructions below). Place in the oven and bake for 20 minutes or until muffins are set. Stick a toothpick or knife in the center and make sure it comes out clean. Remove from oven and serve warm.

For the streusel topping: Add butter, brown sugar, flour and cinnamon to a small bowl. Mix together until the streusel forms a crumb like texture similar to wet sand.

Sugar Cookie Fudge

Ingredients

  • 2 cups Sugar Cookie Mix
  • 2 cups Powdered Sugar
  • ½ cups Butter
  • ¼ cups International Delight Sugar Cookie Creamer
  • ⅔ cups White Chocolate Chips
  • 1 teaspoon Vanilla Extract
  • ½ cups Sprinkles
  • 2 cups Sugar Cookie Mix
  • 2 cups Powdered Sugar
  • ½ cups Butter
  • ¼ cups International Delight Sugar Cookie Creamer
  • ⅔ cups White Chocolate Chips
  • 1 teaspoon Vanilla Extract
  • ½ cups Sprinkles

Preparation

Line an 8×8 in baking pan with parchment paper or foil.

In a large microwave safe bowl, mix together sugar cookie mix and powder sugar. Cut butter into cubes and sprinkle over the top of the mixture. Add creamer, but do not stir.

Microwave on high for 2 minutes. Remove and mix together. Add white chocolate chips and vanilla. Mix until chocolate is melted and smooth.

Pour into prepared pan, and immediately top with sprinkles. Press down gently.

Place in refrigerator until completely set. Cut into 1-inch squares to serve.

Ingredients

  • 1 cup Old Fashioned Rolled Oats
  • ¼ cups Plus 2 Tablespoons White Whole Wheat Flour
  • ½ cups Brown Sugar, Packed
  • 5 Tablespoons Butter, Melted
  • FOR THE PANCAKES:
  • 1 cup White Whole Wheat Flour
  • ¼ cups Truvia
  • ½ teaspoons Salt
  • 1 Tablespoon Baking Powder
  • 2 teaspoons Cinnamon
  • ½ teaspoons Ground Ginger
  • 2  Eggs
  • 2  Egg Yolks
  • 1 cup Vanilla Greek Yogurt
  • 1-½ cup Apples, Chopped
  • Maple Syrup, For Drizzling

Preparation

For the crumble topping:

Preheat your oven to 375°F and spray a baking sheet with cooking spray.

In a large bowl, mix together the oats, flour and brown sugar. Add the melted butter and stir until the mixture forms into small crumbs. Spread the crumbs onto the prepared baking sheet in an even layer and bake until golden brown, about 7-8 minutes. Once they are cooked, turn your oven to 200°F and keep the crumble topping inside to keep warm.

For the pancakes:

In a medium bowl, mix together the flour, Truvia, salt, baking powder, cinnamon and ginger. Set aside.

In a large bowl, whisk together the eggs, egg yolks, and yogurt until well mixed. Stir the dry ingredients and the chopped apples into the wet ingredients and mix until just moist and still slightly lumpy. You don’t want to over-mix. Let the batter stand for 15 minutes.

Preheat your griddle to medium heat and spray with cooking spray.

Using 1/3 cup sized measurements, drop the batter onto the heated griddle leaving space in between them and smooth them out with a spoon. Cook until the edges feel set and the bottom is golden brown, about 4-6 minutes. Flip and repeat cooking the other side. Remove cooked pancakes to a baking tray. Continue until all the batter is gone, placing the tray of pancakes into the oven to keep warm.

Drizzle pancakes with maple syrup, sprinkle crumbs over the top and devour.

Cauliflower Tortillas

Delicious and healthy cauliflower tortillas!

Ingredients

  • 1 head Cauliflower, Washed, Drained And Cored
  • 2  Eggs
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Smoked Paprika
  • ½ teaspoons Ground Cumin
  • 1 teaspoon Olive Oil, For Skillet
  • 1 head Cauliflower, Washed, Drained And Cored
  • 2  Eggs
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Smoked Paprika
  • ½ teaspoons Ground Cumin
  • 1 teaspoon Olive Oil, For Skillet

Preparation

Note you will also need some cheesecloth for this recipe.

On a cutting board, chop the head of cauliflower into chunks and place into a food processor. Process until you reach a rice-like consistency.

Next, pour riced cauliflower into a microwavable bowl and microwave on high setting for 2 minutes. Stir, then microwave again for an additional 2 minutes. Set aside until cooled.

Working in batches, take the riced cauliflower and place it into a sheet of cheesecloth and wring out the excess water. Do this a few times as cauliflower holds a lot of water.

Place the cauliflower into a medium mixing bowl and mix in the eggs and seasoning. Preheat oven to 425 F.

On a non-stick sprayed baking sheet take one-fifth of the mixture and pat it into a round flat disk. Repeat with the rest of the ‘dough’. Recipe should make 5. Bake for 7 minutes until golden. Remove from oven.

Next, in a large skillet over medium high heat, pour a teaspoon of olive oil and coat the pan. Once hot, place 2-3 tortillas at a time into the skillet to brown on each side (3 minutes per side). Remove the cooked tortillas and finish cooking the rest.

Enjoy with shredded chicken, fresh salsa and guacamole.
