Avocado Egg Salad

Avocado replaces almost all the mayo in this easy and delicious egg salad!

Ingredients

  • 4  Hard Boiled Eggs, Peeled
  • 1  Avocado, Pit And Skin Removed
  • ½ Tablespoons Mayonnaise
  • ½ teaspoons Dijon Mustard
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Chopped Chives
  • ¼ teaspoons Salt
  • 4  Hard Boiled Eggs, Peeled
  • 1  Avocado, Pit And Skin Removed
  • ½ Tablespoons Mayonnaise
  • ½ teaspoons Dijon Mustard
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Chopped Chives
  • ¼ teaspoons Salt

Preparation

In a medium bowl, mash the eggs and avocado together using a potato masher. In a separate small bowl combine the mayo, Dijon mustard, fresh lemon juice, chives and salt. Stir the dressing into the avocado and egg mixture until well combined. Serve ½ cup of salad on toasted bread with tomato slices and lettuce.

Shortbread with Dried Fruit and Oats

Description

Shortbread, loaded with dried dates, raisins, toffee and oats. You might even consider replacing the raisins with dried cherries! Trust me, you need to try this recipe! You won’t be sorry!

Ingredients

  • 3 sticks Butter, Softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla
  • 3-½ cups Flour
  • ¼ teaspoons Salt
  • ⅔ cups Dates
  • ½ cups Raisins
  • ⅓ cups Toffee Bits
  • ⅓ cups White Chocolate Chips
  • ½ cups Oats
  • Turbinado Sugar, For Sprinkling

Preparation

Start by creaming your butter and sugar in the large bowl of your stand mixer, until they are fully incorporated. Side note: Make sure your butter is softened! Once you have your butter and sugar incorporated, add the vanilla and mix to combine.

Sift in the flour and salt using a sifter. (You can also use a whisk. In this case, a whisk works well.) Next, add your dried fruit and mix it in until incorporated. And lastly, mix in your toffee bits, white chocolate chips and oats.

Once your dough is ready, turn it onto a floured surface, shape it into a flat disc, wrap in plastic wrap and chill for 30 minutes. Preheat your oven to 350 F.

Once your dough is chilled, roll it out to 1/2 inch thick, and cut it into similar sized rectangles of your desired size. Then sprinkle them with turbinado sugar and place onto parchment paper lined baking sheets.

And lastly, bake them for 15 to 20 minutes or until the edges begin to brown.

Whiskey Sprite Lime Cocktail

Bubbly and refreshing and it only takes a minute to make.

Ingredients

  • 2 ounces, fluid Irish Whiskey
  • 2 ounces, fluid Sprite (or Ginger Ale)
  • 2 ounces, fluid Soda Water (lime Flavored Is Fine)
  • Lime Wedge
  • Ice, To Fill Your Cocktail Glass
  • 2 ounces, fluid Irish Whiskey
  • 2 ounces, fluid Sprite (or Ginger Ale)
  • 2 ounces, fluid Soda Water (lime Flavored Is Fine)
  • Lime Wedge
  • Ice, To Fill Your Cocktail Glass

Preparation

Fill a short cocktail glass with ice. Pour whiskey over ice. Add Sprite and soda water. Stir. Add the juice from a lime wedge then drop it in. Enjoy!

Frosting for Pink Champagne & Strawberry Cupcakes

Description

This is the frosting for our delicious Pink Champagne & Strawberry Cupcakes.

Ingredients

  • ½ cups Pink Champagne Or Sparkling Wine
  • 225 grams Unsalted Butter, At Room Temperature
  • 2-½ cups Icing Sugar (Confectioners Sugar)
  • 1 Tablespoon Pink Champagne Or Sparkling Wine (additional To Above)
  • ½ teaspoons Vanilla Extract
  • 1 pinch Salt
  • 2 drops Red Food Colouring
  • ½ cups Pink Champagne Or Sparkling Wine
  • 225 grams Unsalted Butter, At Room Temperature
  • 2-½ cups Icing Sugar (Confectioners Sugar)
  • 1 Tablespoon Pink Champagne Or Sparkling Wine (additional To Above)
  • ½ teaspoons Vanilla Extract
  • 1 pinch Salt
  • 2 drops Red Food Colouring

Preparation

1. Simmer the first amount of Champagne in a small saucepan over medium-high heat, until it reduces to about 30 ml of liquid. Remove from heat and allow to cool completely.

2. Use an electric mixer to cream the butter until light in colour, smooth and fluffy.

3. With the mixer on its lowest setting, add about a quarter of the icing sugar and mix until fully incorporated. Keep adding the sugar in batches in this same way.

4. With the mixer still on low, add the reduced Champagne, the remaining un-reduced Champagne, the vanilla, salt and food colouring. Increase the speed to high and continue mixing for about three minutes, until you have a smooth and fluffy icing.

Festive Rice Krispy Treats

A playful, delicious and pretty twist on a classic treat! It’s also a great way to use those leftover candied cherries!

Ingredients

  • 7 Tablespoons Butter, Divided
  • 10 ounces, weight Marshmallows
  • 6 cups Rice Krispies Cereal
  • ½ cups Chopped Red Candied Cherries
  • ½ cups Chopped Green Candied Cherries
  • Extra Red And Green Candied Cherries, Cut In Half, Optional For Garnish
  • 7 Tablespoons Butter, Divided
  • 10 ounces, weight Marshmallows
  • 6 cups Rice Krispies Cereal
  • ½ cups Chopped Red Candied Cherries
  • ½ cups Chopped Green Candied Cherries
  • Extra Red And Green Candied Cherries, Cut In Half, Optional For Garnish

Preparation

Line a 9 x 13 inch baking pan with foil. Grease foil with cooking spray. Set aside.

In a large saucepan, melt 6 tablespoons of the butter over medium heat. When butter is completely melted, add marshmallows and cook over medium-low heat, stirring constantly, until marshmallows are almost melted. Add the last tablespoon of butter and continue to cook and stir until mixture is completely melted and smooth.

Remove pan from heat and add the cereal and the chopped cherries. Stir gently to combine.

Pour into the prepared pan and press mixture evenly into the bottom of the pan. (Put a piece of wax paper between your hands and the mixture or spray your hands with cooking spray to keep them from sticking to the mixture.) If desired, press cherry halves into the mixture, spacing them a couple of inches apart. Cool completely before cutting into squares.
