Super easy vegetable lo mein made at home. Put the take-out menus away!
Ingredients
- FOR THE NOODLES:
- 1 pound Lo Mein Noodles
- 1 teaspoon Sesame Oil
- 2 cups Mixed Stir-fry Vegetables (broccoli, Carrots, Onions, Scallions, Snow Peas)
- FOR THE GINGER SAUCE:
- ½ cups Soy Sauce
- 1 teaspoon Sugar
- 2 cloves Garlic, Minced
- 1 piece Fresh Ginger, About An Inch In Size, Minced
- ½ teaspoons Lemon Juice
- ½ teaspoons Sesame Oil
- FOR THE NOODLES:
- 1 pound Lo Mein Noodles
- 1 teaspoon Sesame Oil
- 2 cups Mixed Stir-fry Vegetables (broccoli, Carrots, Onions, Scallions, Snow Peas)

- ½ cups Soy Sauce

- 1 piece Fresh Ginger, About An Inch In Size, Minced

Preparation
Prepare lo mein noodles according to the package instructions and set aside. If using pre-made noodles, add them to a colander and rinse under cold water until they come apart. Set aside.
Add the sesame oil to a wok or skillet on medium high heat. Add your vegetables and stir-fry until tender, about 4-5 minutes.
While the veggies are cooking, whisk together all of the ingredients for the ginger sauce until sugar is dissolved and everything is incorporated.
After 4-5 minutes, add noodles to the skillet along with the sauce. Toss to coat everything and cook for an additional minute or two. Enjoy!
