Vegetable Lo Mein (in Ginger Sauce)

Super easy vegetable lo mein made at home. Put the take-out menus away!

Ingredients

  • FOR THE NOODLES:
  • 1 pound Lo Mein Noodles
  • 1 teaspoon Sesame Oil
  • 2 cups Mixed Stir-fry Vegetables (broccoli, Carrots, Onions, Scallions, Snow Peas)
  • FOR THE GINGER SAUCE:
  • ½ cups Soy Sauce
  • 1 teaspoon Sugar
  • 2 cloves Garlic, Minced
  • 1 piece Fresh Ginger, About An Inch In Size, Minced
  • ½ teaspoons Lemon Juice
  • ½ teaspoons Sesame Oil
  • FOR THE NOODLES:
  • 1 pound Lo Mein Noodles
  • 1 teaspoon Sesame Oil
  • 2 cups Mixed Stir-fry Vegetables (broccoli, Carrots, Onions, Scallions, Snow Peas)
  • FOR THE GINGER SAUCE:
  • ½ cups Soy Sauce
  • 1 teaspoon Sugar
  • 2 cloves Garlic, Minced
  • 1 piece Fresh Ginger, About An Inch In Size, Minced
  • ½ teaspoons Lemon Juice
  • ½ teaspoons Sesame Oil

Preparation

Prepare lo mein noodles according to the package instructions and set aside. If using pre-made noodles, add them to a colander and rinse under cold water until they come apart. Set aside.

Add the sesame oil to a wok or skillet on medium high heat. Add your vegetables and stir-fry until tender, about 4-5 minutes.

While the veggies are cooking, whisk together all of the ingredients for the ginger sauce until sugar is dissolved and everything is incorporated.

After 4-5 minutes, add noodles to the skillet along with the sauce. Toss to coat everything and cook for an additional minute or two. Enjoy!
