Healthy Sloppy Joes

This American classic gets a healthy tweak. All the savory goodness you love with a nutritional boost from healthy beans and vegetables.

Ingredients

  • ½ pounds Lean Ground Beef Or Turkey
  • 2 cloves Garlic, Minced
  • 1 whole Carrot, Peeled And Shredded Plus More For Serving If Desired
  • 3 cups Fresh Spinach Plus More For Serving If Desired
  • 1 cup Canned Navy Beans (or Garbanzos)
  • 1 cup Diced Tomatoes (canned Or Fresh)
  • ¼ cups Green Onions, Chopped
  • 2 teaspoons Grainy Mustard
  • 2 teaspoons Apple Cider Vinegar
  • 1 teaspoon Ketchup
  • 1 teaspoon Maple Syrup
  • 4 whole Whole Wheat Or Seeded Hamburger Buns

Preparation

In a large sauté pan (with lid) cook ground beef on medium-high heat until browned. If necessary, drain any fat from pan. Add garlic and stir to combine.

Add carrots and spinach to ground beef and stir until the spinach begins to wilt (approximately 1-2 minutes). Add remaining ingredients (beans, tomatoes, green onion, mustard, vinegar, ketchup and maple syrup). Reduce heat to medium and cover the pan. Allow mixture to simmer, stirring occasionally, until completely cooked (approximately 8-10 minutes). Remove from heat.

Toast the buns (if desired) and spoon mixture onto buns.

I added another handful of fresh spinach and some additional shredded carrots to the mixture right before serving so the Sloppy Joes would have a little fresh veggie crunch.
