Ingredients

  • FOR THE BARS:
  • 3 cups All-purpose Flour
  • 1 cup Sugar
  • 2 Tablespoons Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • ¾ teaspoons Salt
  • 2 sticks Unsalted Butter, Chilled And Cut Into 1" Pieces
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • FOR THE FILLING:
  • 16 ounces, weight Cream Cheese
  • 1 whole Egg
  • ½ cups Sugar
  • 1 teaspoon Vanilla
  • 1 cup Peanut Butter
  • 1 pinch Salt
  • FOR THE BARS:
  • 3 cups All-purpose Flour
  • 1 cup Sugar
  • 2 Tablespoons Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • ¾ teaspoons Salt
  • 2 sticks Unsalted Butter, Chilled And Cut Into 1" Pieces
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • FOR THE FILLING:
  • 16 ounces, weight Cream Cheese
  • 1 whole Egg
  • ½ cups Sugar
  • 1 teaspoon Vanilla
  • 1 cup Peanut Butter
  • 1 pinch Salt

Preparation

Preheat the oven to 350 F and line a 9″ square baking pan with parchment or aluminum foil allowing foil/paper to hang over two ends of the dish for easy removal.

Add the flour, sugar, cocoa powder, baking powder and salt to the bowl of a food processor and pulse a couple of times to combine. Add the butter and pulse a few times until the mixture resembles coarse crumbs. Add the vanilla and egg and mix until the batter almost turns into a ball. Pat about 2/3 of the dough into the bottom of the pan until you have an even layer.

Using a stand or hand mixer, beat the cream cheese, egg, sugar, vanilla, peanut butter and salt until smooth. Pour into the baking pan and smooth it across the base. Crumble the remaining dough in your hands and sprinkle it on top of the peanut butter batter. Bake for 45 – 55 minutes or until the top is set. Remove from oven and allow to cool before cutting into bars.
