Light Cucumber Salad with a Thai Red Pepper Lime Dressing

Description

Light and healthy cucumber salad with red onion and scallion, paired with a delicious Thai dressing made with fresh lime, a touch of fish sauce, and a dash of red pepper flakes for a nice kick.

Ingredients

  • 2 Tablespoons Rice Vinegar
  • 1 Tablespoon Honey
  • 2 Tablespoons Fish Sauce
  • 1 whole Lime, Juiced
  • 2 Tablespoons Vegetable Oil With No Flavor
  • 1 teaspoon Red Hot Pepper Flakes
  • 1 whole Large Cucumber (I Used An English Cucumber)
  • ¼ whole Red Onion
  • 2 whole Scallions
  • 2 Tablespoons Rice Vinegar
  • 1 Tablespoon Honey
  • 2 Tablespoons Fish Sauce
  • 1 whole Lime, Juiced
  • 2 Tablespoons Vegetable Oil With No Flavor
  • 1 teaspoon Red Hot Pepper Flakes
  • 1 whole Large Cucumber (I Used An English Cucumber)
  • ¼ whole Red Onion
  • 2 whole Scallions

Preparation

In a small bowl, add rice vinegar and honey. With a spoon, mix to dissolve the honey into the vinegar. Add fish sauce and lime juice. Then add vegetable oil and red hot pepper flakes. With a spoon, mix dressing. Leave dressing aside.

Slice ends off of the cucumber and slice cucumber into thirds. With a mandolin slice cucumber into julienne pieces. With mandolin, slice onion into thin julienne pieces. Dice your scallions.

In a large bowl, add cucumber, onion and scallions and drizzle in some of the dressing. Toss with tongs to coat salad with dressing.

Serves 2-3.
