Whole Wheat Apple Crisp Pancakes

Description

All the buttery, wonderful tastes of Grandma’s apple crisp in a light and healthy breakfast made with Greek yogurt!

Ingredients

  • FOR THE CRUMBLE TOPPING:
  • 1 cup Old Fashioned Rolled Oats
  • ¼ cups Plus 2 Tablespoons White Whole Wheat Flour
  • ½ cups Brown Sugar, Packed
  • 5 Tablespoons Butter, Melted
  • FOR THE PANCAKES:
  • 1 cup White Whole Wheat Flour
  • ¼ cups Truvia
  • ½ teaspoons Salt
  • 1 Tablespoon Baking Powder
  • 2 teaspoons Cinnamon
  • ½ teaspoons Ground Ginger
  • 2  Eggs
  • 2  Egg Yolks
  • 1 cup Vanilla Greek Yogurt
  • 1-½ cup Apples, Chopped
  • Maple Syrup, For Drizzling

Preparation

For the crumble topping:

Preheat your oven to 375°F and spray a baking sheet with cooking spray.

In a large bowl, mix together the oats, flour and brown sugar. Add the melted butter and stir until the mixture forms into small crumbs. Spread the crumbs onto the prepared baking sheet in an even layer and bake until golden brown, about 7-8 minutes. Once they are cooked, turn your oven to 200°F and keep the crumble topping inside to keep warm.

For the pancakes:

In a medium bowl, mix together the flour, Truvia, salt, baking powder, cinnamon and ginger. Set aside.

In a large bowl, whisk together the eggs, egg yolks, and yogurt until well mixed. Stir the dry ingredients and the chopped apples into the wet ingredients and mix until just moist and still slightly lumpy. You don’t want to over-mix. Let the batter stand for 15 minutes.

Preheat your griddle to medium heat and spray with cooking spray.

Using 1/3 cup sized measurements, drop the batter onto the heated griddle leaving space in between them and smooth them out with a spoon. Cook until the edges feel set and the bottom is golden brown, about 4-6 minutes. Flip and repeat cooking the other side. Remove cooked pancakes to a baking tray. Continue until all the batter is gone, placing the tray of pancakes into the oven to keep warm.

Drizzle pancakes with maple syrup, sprinkle crumbs over the top and devour.

Cauliflower Tortillas

Description

Delicious and healthy cauliflower tortillas!

Ingredients

  • 1 head Cauliflower, Washed, Drained And Cored
  • 2  Eggs
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Smoked Paprika
  • ½ teaspoons Ground Cumin
  • 1 teaspoon Olive Oil, For Skillet
  • 1 head Cauliflower, Washed, Drained And Cored
  • 2  Eggs
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Smoked Paprika
  • ½ teaspoons Ground Cumin
  • 1 teaspoon Olive Oil, For Skillet

Preparation

Note you will also need some cheesecloth for this recipe.

On a cutting board, chop the head of cauliflower into chunks and place into a food processor. Process until you reach a rice-like consistency.

Next, pour riced cauliflower into a microwavable bowl and microwave on high setting for 2 minutes. Stir, then microwave again for an additional 2 minutes. Set aside until cooled.

Working in batches, take the riced cauliflower and place it into a sheet of cheesecloth and wring out the excess water. Do this a few times as cauliflower holds a lot of water.

Place the cauliflower into a medium mixing bowl and mix in the eggs and seasoning. Preheat oven to 425 F.

On a non-stick sprayed baking sheet take one-fifth of the mixture and pat it into a round flat disk. Repeat with the rest of the ‘dough’. Recipe should make 5. Bake for 7 minutes until golden. Remove from oven.

Next, in a large skillet over medium high heat, pour a teaspoon of olive oil and coat the pan. Once hot, place 2-3 tortillas at a time into the skillet to brown on each side (3 minutes per side). Remove the cooked tortillas and finish cooking the rest.

Enjoy with shredded chicken, fresh salsa and guacamole.

Easy Peppermint Fudge

Description

The easiest fudge you’ll ever make! Top it with peppermint for Christmas, or any topping (nuts, sprinkles, candies) you’d like!

Ingredients

  • 3 cups Semi-Sweet Chocolate Chips
  • 1 can (14 Oz. Size) Sweetened Condensed Milk
  • 8 whole Peppermint Candies, Crushed
  • 3 cups Semi-Sweet Chocolate Chips
  • 1 can (14 Oz. Size) Sweetened Condensed Milk
  • 8 whole Peppermint Candies, Crushed

Preparation

Line a square 8 x 8 pan with foil and smooth the surface. Spray foil with nonstick spray.

Combine the chocolate chips and sweetened condensed milk in a double boiler over medium heat. Heat until melted, about 5-7 minutes. Stir until smooth, then immediately pour it into the foil-lined pan. Use an offset spatula to smooth the surface, then sprinkle on the crushed peppermints.

Refrigerate for 2 hours, then cut into small squares.

Ingredients

  • ½ cups Half-and-half
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 1 Tablespoon Fresh Herbs Of Choice, Or 1 Teaspoon Dried Herbs (suggestions: Basil, Tarragon, Chives, Mushroom Blend)
  • 1 cup White Cheddar Cheese, Fresh Grated (or Cheese Of Your Choice)
  • 1 Tablespoon Butter
  • 1 whole Yellow Onion, Diced
  • 1-½ cup Leftover Ham, Diced
  • 2 cloves Garlic, Minced
  • 8 whole Large Eggs
  • ½ cups Half-and-half
  • ½ teaspoons Salt
  • ½ teaspoons Pepper

Preparation

Preheat oven to 400 F. Whisk together the eggs, half-and-half, salt, pepper, and herbs of your choice. Stir in the cheese and set mixture aside.

In a 10-inch cast iron skillet over medium heat, melt the butter. Add the onions to the skillet and cook for 5 minutes, then add the ham and minced garlic. Continue cooking until the ham is warmed through and the onions begin to brown. Spread the mixture across the bottom of the skillet. Pour the egg mixture over the top of the onions/ham. Do not stir it. Continue cooking over medium heat for 5 minutes.

Place the cast iron skillet in the preheated oven. Cook the frittata for 10-15 minutes, or until the center is set. Remove from oven. Cool for 5 minutes before slicing and serving.

One-Bowl Coffee Cake with Walnut Streusel

Ingredients

  • ½ cups Butter, Softened
  • ½ cups Greek Yogurt Or Sour Cream
  • ¾ cups White Sugar
  • 1-½ teaspoon Vanilla Extract
  • 1 whole Egg
  • 1 cup All-purpose Flour
  • ⅛ teaspoons Salt
  • 1-½ teaspoon Baking Powder
  • FOR THE STREUSEL:
  • ½ cups Brown Sugar
  • 1 cup Chopped Walnuts Or Pecans
  • 1 teaspoon Ground Cinnamon
  • 3 Tablespoons Butter, Melted
  • ½ cups All-purpose Flour
  • ½ cups Butter, Softened
  • ½ cups Greek Yogurt Or Sour Cream
  • ¾ cups White Sugar
  • 1-½ teaspoon Vanilla Extract
  • 1 whole Egg
  • 1 cup All-purpose Flour
  • ⅛ teaspoons Salt
  • 1-½ teaspoon Baking Powder
  • FOR THE STREUSEL:
  • ½ cups Brown Sugar
  • 1 cup Chopped Walnuts Or Pecans
  • 1 teaspoon Ground Cinnamon
  • 3 Tablespoons Butter, Melted
  • ½ cups All-purpose Flour

Preparation

Preheat oven to 350ºF. Spray loaf pan very well with nonstick spray.

Beat softened butter until light and fluffy. Add Greek yogurt and beat until combined. Add white sugar and vanilla, continue mixing until well combined. Beat in the egg. Mixture may appear curdled at this point but that is fine.

Add the flour, salt, and baking powder. Beat until just combined, then scrape down bowl with spatula and mix until completely combined. Spread batter into greased pan, scrape bowl down with spatula.

For the streusel, in the same bowl, combine brown sugar, walnuts, cinnamon, butter and flour and mix until well combined. Spread over batter.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
