Baked Cinnamon Apple Wedges

Description

Just four ingredients, two minutes of prep and ten minutes in the oven. Simple and delicious.

Ingredients

  • 1  Apple, Cored
  • 1 teaspoon Maple Syrup
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg
  • 1  Apple, Cored
  • 1 teaspoon Maple Syrup
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg

Preparation

Preheat oven to 180 C. Cut the apple into about 10-12 wedges and mix it with the rest of the ingredients.

Place the apple wedges in a small baking dish or on a baking tray, in a single layer. Bake in the oven for 10 minutes. The apples should be golden brown and cooked all the way through. Remove from oven and serve while warm.

Ingredients

  • 2-½ cups Blanched Almond Flour
  • ¼ teaspoons Celtic Sea Salt
  • ½ teaspoons Baking Soda
  • ¼ cups Coconut Oil, Plus More For Greasing Baking Dish
  • ½ cups Honey
  • 3 whole Large Eggs
  • FOR THE TOPPING:
  • ¼ cups Coconut Oil, Melted
  • ¼ cups Coconut Sugar
  • 2 Tablespoons Ground Cinnamon
  • ½ cups Sliced Almonds
  • 2-½ cups Blanched Almond Flour
  • ¼ teaspoons Celtic Sea Salt
  • ½ teaspoons Baking Soda
  • ¼ cups Coconut Oil, Plus More For Greasing Baking Dish
  • ½ cups Honey
  • 3 whole Large Eggs
  • FOR THE TOPPING:
  • ¼ cups Coconut Oil, Melted
  • ¼ cups Coconut Sugar
  • 2 Tablespoons Ground Cinnamon
  • ½ cups Sliced Almonds

Preparation

Preheat oven to 350ºF. Grease a 9-inch round metal baking dish with coconut oil and dust with almond flour.

In a food processor, combine almond flour, salt, and baking soda. Pulse in coconut oil, honey, and eggs. Spread the batter into prepared baking dish.

To make topping, combine coconut oil, coconut sugar, cinnamon, and sliced almonds in a bowl. Sprinkle topping over cake batter.

Bake at 350°F for 25–35 minutes. Cool and serve.

Grilled Chicken Salad with Candied Pecans

This is one of my go-to salads when I’m in the mood for something both sweet and savory!

Ingredients

  • FOR THE SALAD:
  • 1 whole Boneless Skinless Chicken Breast
  • 1 Tablespoon Lemon Juice
  • 2 cups Spring Mix Salad
  • ¼ cups Candied Pecans
  • 1 Tablespoon Olive Oil
  • ½ Tablespoons Balsamic Vinegar
  • FOR THE CANDIED PECANS:
  • ¼ cups Granulated Sugar
  • ¼ cups Brown Sugar
  • 1 Tablespoon Cinnamon
  • 3 cups Pecans
  • 1 whole Egg White
  • FOR THE OPTIONAL DRIZZLE:
  • 1 cup Balsamic Vinegar
  • FOR THE SALAD:
  • 1 whole Boneless Skinless Chicken Breast
  • 1 Tablespoon Lemon Juice
  • 2 cups Spring Mix Salad
  • ¼ cups Candied Pecans
  • 1 Tablespoon Olive Oil
  • ½ Tablespoons Balsamic Vinegar
  • FOR THE CANDIED PECANS:
  • ¼ cups Granulated Sugar
  • ¼ cups Brown Sugar
  • 1 Tablespoon Cinnamon
  • 3 cups Pecans
  • 1 whole Egg White
  • FOR THE OPTIONAL DRIZZLE:
  • 1 cup Balsamic Vinegar

Preparation

Pour lemon juice on top of your chicken breast and set aside for 15 minutes. Give a grill pan a generous spritz with cooking spray, then set it over a medium-high flame.

Grill your chicken breast for 4-5 minutes on each side, or until cooked through and no longer pink in the center. Transfer to a plate and leave alone for 5 minutes.

While chicken is resting, add your spring mix to a serving bowl and toss in the candied pecans (recipe below; you’ll only use a portion of the batch for the salad).

Combine olive oil and balsamic vinegar in a bowl and pour it on top of the salad. Top your salad with your chicken breast that has been sliced or cubed.

For the pecans:
Preheat your oven to 300 F. Combine sugars and cinnamon in a small bowl and set aside. Add pecans into a bowl and add the egg white. Toss to coat the pecans, then dump in your sugar mixture. Carefully mix to make sure each pecan is coated well.

Transfer to a well-greased baking sheet, spread in an even layer and bake for 20-30 minutes. Your kitchen will smell amazing and you’ll no longer understand how you ever lived without candied pecans in your life. Remove from oven and allow to cool.

Keep in an airtight container until ready to use. Enjoy!

Optional: Drizzle salad with a little balsamic reduction. To do so, heat 1 cup of balsamic vinegar in a saucepan on medium-low heat and allow to simmer until thickened and reduced, about 10 minutes. You won’t need the full amount, but this stays good in the fridge for about a month and is always good to have on hand. Enjoy!

White Cheddar Popcorn

Ingredients

  • ½ cups Popcorn Kernels
  • 1-½ teaspoon White Cheddar Powder
  • Salt And Pepper, to taste
  • ½ cups Popcorn Kernels
  • 1-½ teaspoon White Cheddar Powder
  • Salt And Pepper, to taste

Preparation

Place popcorn kernels in a brown paper bag then fold flap down in half and then once more. Cook in microwave for 2–3 minutes or until kernels are fully popped.

Open bag, sprinkle in white cheddar power and salt and pepper. Shake vigorously to combine and enjoy!

Cream Cheese Lasagna

Description

Typically I use a ricotta cheese blend for my lasagna filling, however I did not have any in stock. I decided to substitute cream cheese instead. I am never going back to the ricotta blend. It was that good!

Ingredients

  • ½ pounds "loose" Italian Sausage
  • ½ pounds Ground Chuck
  • 4 cups Marinara Sauce
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Italian Seasoning
  • 1 teaspoon Salt To Taste
  • ½ teaspoons Cracked Black Pepper
  • 8 ounces, weight Cream Cheese, Softened
  • 2 whole Eggs
  • ¾ cups Grated Parmesan Cheese, Plus 3 Tablespoons
  • 1 Tablespoon Dried Parsley
  • 12 whole Sheets Of Lasagna Noodles, Cooked Per Package Instructions Just Under Al Dente
  • 3 cups Shredded Mozzarella Cheese
  • ½ pounds "loose" Italian Sausage
  • ½ pounds Ground Chuck

Preparation

Preheat your oven to 350 F.

Start by adding the sausage and beef to a pot over medium heat, and cook it all the way through until nicely browned. Drain any fat, and return the pot of meat to the stove. Add your marinara, and give it a good stir. Season with the garlic, Italian seasoning, and some salt and pepper. Stir again.

Next, make your cheese sauce. Into a mixing bowl, add the cream cheese, eggs, and 3/4 cup of Parmesan cheese. Season with an additional pinch of salt and pepper, and the dried parsley. Give this a good mix until you have a smooth cheese sauce and everything is nicely incorporated.

OK, get your lasagna pan out. You know you have one (a deep 9×13 size). Take a ladle of the marinara and meat sauce, and get a nice thin layer on the bottom of the pan. Add 3 sheets of the cooked lasagna sheets onto the bottom. Top with some of the cheese mixture, into a nice even layer. Sprinkle a bit of the mozzarella cheese over the top, then more of the meat sauce. You want nice, even layers, reserving enough of both meat and cheese sauce for more layers.

Top with 3 more sheets of pasta, more cheese sauce, a bit more mozzarella, then more meat sauce. Repeat again, making sure the top layer gets the remaining meat sauce. Cover with mozzarella cheese, sprinkle on the 2 tablespoons of Parmesan cheese, and take a look at that thing of beauty.

Spray a sheet of aluminum foil with cooking spray, and place that, sprayed side down, onto the top of the pan of lasagna. I find this helps to prevent the cheese from sticking to the foil.

Put dish into the heated oven and cook for 40 minutes. Uncover, and cook for an additional 10-15 minutes or until the cheese is nice and golden, and some of the edges are a bit crispy. Remove from oven.

Let this cool down a bit as it will be piping hot, then slice and serve.
