Bulgogi Kimchi Fries

Description

A unique and healthy alternative to loaded cheese fries. Baked fries are topped with bulgogi, kimchi and a special Sriracha sauce. Recipes for bulgogi and kimchi are included!

Ingredients

  • FOR THE KIMCHI:
  • 1 head Large Napa Or Green Cabbage, Cored And Chopped Into 2-3 Inch Pieces
  • ¼ cups Kosher Salt
  • 4  Green Onions, Sliced Into 1 Inch Pieces (both White And Green Sections)
  • 1 Tablespoon Korean Chili Powder (add More To Make Spicer)
  • ⅓ cups Good Quality Fish Sauce
  • 1 Tablespoon Grated Fresh Ginger
  • 1 Tablespoon Grated Fresh Garlic
  • FOR THE BULGOGI:
  • 1 pound Lean Beef, Chicken, Or Pork, Thinly Sliced Or Shaved
  • ½ cups Low-Sodium Tamari Or Soy Sauce
  • 1 Tablespoon Fresh Garlic, Minced
  • 1 Tablespoon Sesame Seeds
  • 1 Tablespoon Toasted Sesame Seed Oil
  • ½ teaspoons Black Pepper
  • 1  Green Onions, Chopped (both White And Green Sections)
  • FOR THE SRIRACHA "SPECIAL"SAUCE:
  • ½ cups Sour Cream
  • ¼ cups Mayonnaise
  • 1 Tablespoon Sriracha Hot Sauce
  • FOR THE FRIES:
  • 3  Large Russet Potatoes, Washed And Dried
  • 2 Tablespoons Olive Oil
  • Salt To Taste
  • OPTIONAL TOPPINGS: Chopped Cilantro, Sliced Green Onions, Extra Sriracha, And Shredded Cheese

Preparation

Note the kimchi requires 4.5 days of marinating time so plan ahead.

For the quick kimchi:
In a large bowl, mix together chopped cabbage and salt. Cover and set aside for at least 6 hours.

After 6 hours, place cabbage in a colander and rinse all the salt off with cold water. Squeeze as much water as possible from the cabbage and place in a large bowl. Sprinkle the sliced green onions, chili powder, fish sauce, ginger and garlic over the cabbage. Mix it together, cover and place in a dark area for at least 4 days.

For the bulgogi:
In a medium bowl, mix all of the bulgogi ingredients. Cover and place in the refrigerator for at least 2 hours.

Grill or fry bulgogi over medium-high heat for about 2-3 minutes on each side, or until thoroughly cooked. Set aside to cool slightly. Once cooled, chop bulgogi meat into bite sized pieces. Set aside.

For the Sriracha “special sauce”:
In a small bowl, mix all ingredients until well blended. Cover and set aside.

For the fries:
Preheat oven to 450 F. Cut each potato into slices lengthwise and then cut each slice into sticks. Place in a large bowl and toss with the olive oil so each stick is coated. Place potato sticks onto a large baking sheet in a single layer and bake for 15-20 minutes. Flip them over and bake for an additional 10-15 minutes, or until fries are browned and crispy.

For the assembly:
Place fries on plate, top with chopped bulgogi, kimchi, Sriracha special sauce, and any of the optional toppings, as desired. Get a big fork and dig in!

Breakfast Patty Melt

Description

Just like a regular patty melt, but with yummy sausage and scrambled eggs! Split this one with someone you love—it’s nice and filling!

Ingredients

  • 4 Tablespoons Butter, More If Needed
  • ½ whole Medium Yellow Onion, Sliced
  • ¼ pounds Breakfast Sausage (Jimmy Dean, JC Potter, Etc)
  • 2 whole Eggs, Beaten
  • 3 slices Cheddar, Swiss, Provolone, Or Other Cheese
  • 2 slices Bread (sourdough, Rye, Whole Wheat, Etc.)
  • 4 Tablespoons Butter, More If Needed
  • ½ whole Medium Yellow Onion, Sliced
  • ¼ pounds Breakfast Sausage (Jimmy Dean, JC Potter, Etc)
  • 2 whole Eggs, Beaten
  • 3 slices Cheddar, Swiss, Provolone, Or Other Cheese
  • 2 slices Bread (sourdough, Rye, Whole Wheat, Etc.)

Preparation

Heat a nonstick skillet over low heat and melt 2 tablespoons of the butter. Add the onions and cook, stirring occasionally, for 15 to 20 minutes, until onions are soft and slightly caramelized. Remove them to a plate and set them aside.

Form the sausage into a thin patty about the width of the bread you’re using. Add it to the same skillet and increase the heat to medium. Cook the patty on both sides until fully cooked through, about 5 minutes. Remove to a plate and set aside. Wipe the skillet clean with a paper towel.

Pour in the beaten eggs and cook, forming them into a rough circle as they set up. Flip to finish cooking on the other side.

Assemble the patty melt: bread, cheese, patty, eggs, cheese, onions, cheese, bread. Melt the remaining butter in a clean skillet over low heat. Place the sandwich in the skillet and cook low and slow for a good 8 to 10 minutes, until the cheese is melted and the bread is deliciously crisp. Add more butter to the skillet if the bread needs it (you don’t want the bread to be dry!)

Slice in half and serve.

No-Bake Energy Bites (Berry Chocolate and Cocoa Pecan)

These deliciously healthy energy bites are the perfect snack for someone on-the-go, or for a simple energy boost throughout the day! Made with all natural almond butter, ground flax, agave nectar or honey, nuts or fruits, the possibilities are endless! I’ve included two recipes here.

Ingredients

  • FOR THE BERRY CHOCOLATE BALLS:
  • 1 cup Rolled Oats
  • ½ cups All-natural Almond Butter
  • 2 Tablespoons Cocoa Powder
  • ¼ cups Blueberry Or Raspberry Agave Nectar
  • 1 Tablespoon Coconut Oil, Melted
  • 2 Tablespoons Ground Flax
  • ⅓ cups Dried Cranberries
  • FOR THE COCOA PECAN BALLS:
  • 1 cup Rolled Oats
  • ½ cups All-natural Almond Butter
  • 2 Tablespoons Cocoa Powder
  • ¼ cups Organic Honey
  • 1 Tablespoon Coconut Oil, Melted
  • 2 Tablespoons Ground Flax
  • ⅓ cups Chopped Pecans

Preparation

Empty all of the listed ingredients for the berry chocolate balls into a large bowl. With a large spoon or spatula, stir and fold until well combined. Do the same with the ingredients for the cocoa pecan balls.

Cover and refrigerate for 30 minutes.

After 30 minutes, remove the bowls from the fridge. With a tablespoon or cookie scoop, scoop out enough to roll a ball that is approximately 2 inches wide and 2 inches tall. Place balls in a container and keep refrigerated.

Easy 20-Minute Beef and Broccoli

Ingredients

  • 2 Tablespoons Oil, Divided
  • 1 pound Flank Steak Or Chuck Roast, Thinly Sliced Across The Grain
  • 3 cups Broccoli
  • 2 cloves Garlic, Minced
  • 1 cup Low Sodium Beef Broth
  • ¼ cups Low Sodium Soy Sauce
  • 1 teaspoon Brown Sugar
  • ½ teaspoons Sesame Oil
  • 1 teaspoon Cornstarch
  • ¼ teaspoons Red Pepper Flakes
  • ⅛ teaspoons Pepper
  • 2 Tablespoons Oil, Divided
  • 1 pound Flank Steak Or Chuck Roast, Thinly Sliced Across The Grain
  • 3 cups Broccoli
  • 2 cloves Garlic, Minced
  • 1 cup Low Sodium Beef Broth
  • ¼ cups Low Sodium Soy Sauce
  • 1 teaspoon Brown Sugar
  • ½ teaspoons Sesame Oil
  • 1 teaspoon Cornstarch
  • ¼ teaspoons Red Pepper Flakes
  • ⅛ teaspoons Pepper

Preparation

Add 1 tablespoon of oil to a large skillet. Add steak and saute until almost fully cooked. Take out of pan and put on a plate.

Add remaining tablespoon of oil back to pan along with broccoli. Cook until tender but still crisp. Toss in garlic and saute for 1 minute.

Meanwhile, mix together beef broth, soy sauce, brown sugar, sesame oil and cornstarch in a small bowl.

Add the steak back to the pan along with sauce mixture. Cook until sauce is thickened and steak is fully cooked.

Serve immediately with white or brown rice and garnish with sesame seeds if desired.

A fresh, healthy and delicious Green Juice that won’t break the bank!

Ingredients

  • 1 bunch Kale
  • 1 cup Whole, Fresh Parsley
  • 2 whole Granny Smith Apples
  • ½ whole Lemon, Including Rind
  • 1 piece (about 2" Cube) Ginger, Peeled
  • 1 bunch Kale

Preparation

Cut up all fruits and veggies so they will fit in the juicer. Juice all ingredients in a juicer. Stir to make sure everything is mixed together.

Drink up!
