No-Bake German Chocolate Protein Bites

Ingredients

  • 6 whole Pitted Medjool Dates (soaked In Water For An Hour Then Drained)
  • 1 whole (30 Gram Size) Scoop Plant Fusion Chocolate Protein Powder
  • ¼ cups Unsweetened Vanilla Almond Milk
  • ½ Tablespoons Coconut Oil
  • ¼ cups Reduced Fat Unsweetened Shredded Coconut, Plus 1 Tablespoon, Divided Use
  • 1 whole (1 Oz. Size) Sugar Free Dark Chocolate Bite (I Use Amber Lyn Chocolates)

Preparation

Place the dates, protein powder, milk, oil and 1/4 cup of the coconut into a food processor and mix until well combined. A spatula will be your best friend with this recipe! Keep scraping down the sides of the bowl and continue processing until the dates are all chopped up.

Roll the mixture into bite-sized balls and then lightly flatten into squares. Place the tablespoon of shredded coconut in a small bowl and dip the tops of the squares into it.

Place the chocolate square in a zip lock bag and microwave for about 30-45 seconds until melted. Snip off the corner of the bag and squeeze the melted chocolate onto the top of the bites! Store in an airtight container in the refrigerator.

  • 1 whole Banana, Peeled
  • 1 Tablespoon Peanut Butter
  • 1-½ teaspoon Cacao Powder
  • ¼ teaspoons Vanilla Extract
  • ½ packages (Individual Size) Stevia
  • 2-⅛ ounces, weight Precooked Quinoa
  • 1 whole Banana, Peeled
  • 1 Tablespoon Peanut Butter
  • 1-½ teaspoon Cacao Powder
  • ¼ teaspoons Vanilla Extract
  • ½ packages (Individual Size) Stevia
  • 2-⅛ ounces, weight Precooked Quinoa

Preparation

Mash the banana and peanut butter together in a bowl with a fork. Next add in the cacao powder, vanilla and stevia and stir until well combined. Finally mix the cooked quinoa into the banana mixture and serve. Enjoy!

This savory Pea Pilaf is loved at Pakistani dinner tables and is served with a curry, kebabs and yogurt Raita.

Ingredients

  • 1 cup Basmati Rice
  • 2 Tablespoons Oil - I Am Using Sunflower Oil
  • ½ cups Onion, Chopped
  • 2 whole Black Cardamom
  • 10 whole Black Peppercorns
  • 2 sticks Cinnamon Sticks
  • 1 teaspoon Cumin Seeds
  • 5 whole Cloves
  • 2 whole Bay Leaves
  • 1 whole Green Chili
  • 1-½ cup Chicken Stock
  • 1 cup Frozen Peas
  • 1 teaspoon Salt
  • 1 cup Basmati Rice
  • 2 Tablespoons Oil - I Am Using Sunflower Oil
  • ½ cups Onion, Chopped
  • 2 whole Black Cardamom
  • 10 whole Black Peppercorns
  • 2 sticks Cinnamon Sticks
  • 1 teaspoon Cumin Seeds

Preparation

1. Put the rice in a strainer. Wash the rice 3 times with cold water then soak it for 30 minutes before cooking.
2. Heat the oil in a pan (it should have a lid) over medium heat then add onions to it. Let them cook and get some color.
3. Add all of the dry spices to it and fry till onions are dark brown.
4. Add the whole green chili as well.
5. Now add stock and bring it to boil on medium heat.
6. Add peas and boil for only a minute more.
7. Drain water from the rice and add it to the boiling stock. Wait for it to boil again on medium heat.
8. In the meantime put a heat diffuser (see note) over medium flame on another burner on your stove. This will be used to steam cook the rice.
9. Once the liquid with rice starts boiling, wait for 3/4 of the stock to be evaporated.
10. Now place a piece of aluminum foil on top of the cooking pot and seal the pan with the lid ensuring the steam does not escape. Put it over the heat diffuser and reduce the heat to low.
11. Let the rice cook for 12-15 minutes on the lowest heat on the stove over the diffuser.
12. Remove the pan from the stove. Open the pan and stir the rice carefully. Add salt to taste. All liquid should have dried and rice should be fully cooked. Let it sit for 5 minutes before serving.

Note: If your pan does not have a heavy bottom or your stove does not operate properly at a low setting, a heat diffuser for the stove top use is necessary to spread the heat evenly across the bottom of your pan.

It really doesn’t get much easier than this. Simply add 4 ingredients plus some seasonings to the slow-cooker and you have a fuss free meal option your whole family will love.

Ingredients

  • 1  Medium Red Bell Pepper
  • 1  Medium Yellow Bell Pepper
  • 1  Medium Green Bell Pepper
  • 1  Medium Onion
  • 1 package (1 Oz. Size) Taco/fajita Seasoning
  • 1 pound Boneless, Skinless Chicken Breasts
  • ½ cups Chicken Broth
  • 6  Flour Tortillas
  • Desired Toppings ( Cheese, Salsa, Sour Cream, Guacamole, Cilantro
  • 1  Medium Red Bell Pepper
  • 1  Medium Yellow Bell Pepper
  • 1  Medium Green Bell Pepper
  • 1  Medium Onion
  • 1 package (1 Oz. Size) Taco/fajita Seasoning
  • 1 pound Boneless, Skinless Chicken Breasts
  • ½ cups Chicken Broth
  • 6  Flour Tortillas

Preparation

Slice bell peppers and remove the stem and seeds. Peel the onions. Slice veggies in 1/4 inch slices. Add them into the bottom of your crockpot. Sprinkle taco or fajita seasoning packet over bell peppers and onions. Add chicken breasts and chicken broth and put the lid on. Cook on low for 6-8 hours, or on high for 3-4 hours.

Remove chicken from the crockpot and let it cool slightly. Use two forks to shred the chicken. Add shredded chicken back to the crockpot and mix with the peppers and onions.

Serve over tortillas with your choice of toppings (we like cheese, salsa, guacamole, sour cream, fresh cilantro).

Gluten-Free Blueberry Crumb Pie

Description

Gluten-free pie shouldn’t be harder to make or less tasty. This pie includes lots of butter, gluten-free flour, and a generous portion of blueberries! Sweet and buttery all the way through!

Ingredients

  • FOR THE CRUST:
  • 1-¼ cup Cold Gluten Free Flour (I Used And Loved Cup 4 Cup Brand)
  • ½ teaspoons Sea Salt
  • ¾ teaspoons Pure Cane Sugar
  • ½ cups Cold Unsalted Butter, Cubed
  • ¼ cups Ice Cold Water, More Or Less Depending On Where You Live
  • FOR THE FILLING:
  • 2 bags (12 Oz. Size) Frozen Blueberries (no Sugar Added, Just Fruit), Completely Defrosted In Fridge Overnight
  • ⅓ cups (heaping) Pure Cane Sugar
  • 2-½ Tablespoons Gluten Free Flour (again, I Used Cup 4 Cup Brand)
  • 1 teaspoon Good Quality Vanilla Extract
  • 1 Tablespoon Fresh Lemon Juice
  • FOR THE CRUMB TOPPING:
  • ½ cups Cold Unsalted Butter, Cubed
  • ½ cups Pure Cane Sugar
  • 1 cup Gluten Free Flour (again, I Used Cup 4 Cup Brand)
  • 1 pinch Sea Salt
  • FOR THE CRUST:
  • 1-¼ cup Cold Gluten Free Flour (I Used And Loved Cup 4 Cup Brand)
  • ½ teaspoons Sea Salt
  • ¾ teaspoons Pure Cane Sugar
  • ½ cups Cold Unsalted Butter, Cubed
  • ¼ cups Ice Cold Water, More Or Less Depending On Where You Live
  • FOR THE FILLING:
  • 2 bags (12 Oz. Size) Frozen Blueberries (no Sugar Added, Just Fruit), Completely Defrosted In Fridge Overnight
  • ⅓ cups (heaping) Pure Cane Sugar
  • 2-½ Tablespoons Gluten Free Flour (again, I Used Cup 4 Cup Brand)
  • 1 teaspoon Good Quality Vanilla Extract

  • FOR THE CRUMB TOPPING:
  • ½ cups Cold Unsalted Butter, Cubed
  • ½ cups Pure Cane Sugar
  • 1 cup Gluten Free Flour (again, I Used Cup 4 Cup Brand)
  • 1 pinch Sea Salt

Preparation

To make the crust:

1. In your food processor add the flour, salt and sugar. Pulse until combined. Next, add in the cubed butter and pulse until a crumb starts to form with pea sized chunks.

2. While pulsing continuously, slowly add in your ice cold water. Depending on the weather that day you might need the listed amount or you might need a little more or even a little less. As soon as the crust starts to clump together and form into dough, you’re done. Do not over mix or add too much water. You want the crust to clump and hold together when you squeeze between fingers.

3. Flour a counter with more gluten-free flour. Add dough to surface and bring together with your hands. Gently and quickly form into a disk without kneading and then roll it out until it’s 1/4″ thick.

4. Carefully roll dough around your rolling pin, bring it over your pie pan, and unroll across the top. This is the best way to make sure crust doesn’t rip or tear. If it does do so, simply pinch it back together.

5. Cut off excess dough, leaving a little overhang. Excess dough can be baked and turned into snacks! Next, fold that overhang under itself so that you have a nice smooth edged crust and crimp as you see fit.

6. Place dough in the fridge to chill and rest for 30 minutes.

While dough is resting, preheat oven to 425°F and make the gluten-free blueberry filling:

1. In a large bowl, add your defrosted frozen blueberries as well as the juice that collected in blueberry bag, sugar, flour, vanilla and lemon juice. Mix together until completely combined and all the flour lumps are gone.

2. Set filling into the fridge to chill.

While that is chilling, make the gluten-free crumb topping:

1. Add all the ingredients to a food processor and pulse until a crumb forms with pea sized chunks. You can also do this by hand in a large bowl with a fork or pastry cutter. Just work the butter into the sugar, flour and salt until crumbs form. Set aside.

Now let’s put everything together:

1. Carefully add blueberry filling to your chilled pie crust. Make sure to scrape the bowl.

2. Cover entire surface of filling with your crumb mixture. Pile it on there and make sure surface is a nice even layer. If there is any crumb mix left over, store it in the fridge in an airtight container for up to a week or in the freezer for months!

3. Place pie on a tin foil lined baking sheet and bake in the center of your preheated oven for 15 minutes.

If your crust starts to brown quicker than your filling is cooking, you can cover the crust with a handy pie crust shield to help protect the surface while it continues to bake. Or you can carefully cover edges with tin foil.

4. Once the 15 minutes is up, turn heat down to 350°F and bake pie another hour more, or until topping is golden brown and filling is gently bubbling and puffed. Make sure to turn the pan halfway through baking to ensure even baking and browning.

Remove it from the oven and allow to sit on baking sheet until cool to the touch. Then remove and allow to cool completely and set up, before serving.

Notes:
1. Makes one 8″ pie.
2. Results may vary depending on the type of gluten-free flour used. Make sure you know and love your gluten-free flourl. I recommend using Cup 4 Cup for best results.
