Savory Kale Oatmeal Cups

Description

Oatmeal is a favorite breakfast for most of us, and sneaking in the green into this whole grain makes it a hearty breakfast or brunch item.

Ingredients

  • 2 cups Quick Oats
  • 1 cup Oats Flour
  • 2 cups Baby Kale
  • 1-½ cup Silken Tofu
  • 1-¼ teaspoon Salt
  • 1-½ Tablespoon Sriracha Sauce
  • 2 cups Quick Oats

Preparation

Preheat oven to 425ºF and prepare a muffin tray by greasing it.

Combine all ingredients in a food processor and process until smooth.

With an ice cream scoop, spoon batter into prepared muffin tray. Bake in middle rack for 15–17 minutes or until inserted tester comes out clean.

Take tray out of oven and serve warm with ketchup.

Bacon-Wrapped Apple Slices

Description

Apple wrapped in bacon with bubbly cheese on the inside. The perfect combination for the savory sweet lovers.

Ingredients

  • 2 whole Very Large Apples, Washed And Dried
  • 12 slices Bacon
  • 8 ounces, weight Brie Cheese
  • 2 whole Very Large Apples, Washed And Dried
  • 12 slices Bacon
  • 8 ounces, weight Brie Cheese

Preparation

You also may want toothpicks, for serving.

Preheat oven to 350 F. Line a rimmed baking sheet with parchment paper.

Core each apple with an apple slicer and slice into 12 slices per apple. Cut each slice of bacon in half down the center. Thinly slice brie into ½ inch slices (for an 8 ounce chunk you should get 48 slices).

Begin rolling each apple slice topped with one brie slice with the bacon. Place bacon wrapped apple slices on the parchment paper lined baking tray.

Bake for 30-32 minutes. Pull the pan out of the oven, top with one brie slice each, finish with a toothpick and serve immediately.

Raspberry Fool

Description

One of the simplest, quickest desserts in the universe. Make sure you have plenty of people to share it with you or bad things could happen!

Ingredients

  • 3 cups Raspberries, Plus A Few More For Serving
  • ¼ cups Sugar
  • 3 Tablespoons Raspberry Liqueur (or You May Just Use Water)
  • 2 cups Cold Heavy Cream
  • ½ cups Powdered Sugar
  • 8 whole Vanilla Wafers (or Other Cookie)
  • Fresh Mint Sprigs, For Garnish (optional)
  • 3 cups Raspberries, Plus A Few More For Serving
  • ¼ cups Sugar
  • 3 Tablespoons Raspberry Liqueur (or You May Just Use Water)
  • 2 cups Cold Heavy Cream
  • ½ cups Powdered Sugar

Preparation

In a bowl, stir together the raspberries, sugar, and liqueur (or water) and let it sit for 10 to 15 minutes.

Whip the cream with the powdered sugar until soft peaks form.

Mash the raspberries with a fork until all the liquid and fruit are mashed together.

Spoon half the fruit into the cream and fold once or twice with a rubber spatula; do not overmix!

Add half of the remaining fruit and fold once or twice. If you want more fruit, add the rest; if not, use remaining fruit puree as a garnish on top.

Serve in pretty glasses with crumbed cookies on top!

***Best if made right before serving.

Coconut Quinoa Matcha Parfaits

These Coconut Quinoa Matcha Parfaits have layers of coconut quinoa, matcha coconut Greek yogurt and whipped coconut cream. A healthy and delicious breakfast!

Ingredients

  • ½ cups Quinoa, Rinsed
  • 1 cup Lite Coconut Milk, Divided
  • 5-⅓ ounces, weight Coconut Greek Yogurt
  • 1 whole Banana, Peeled And Chopped
  • 1 teaspoon Matcha Powder
  • 1 can (13 Oz. Size) Full Fat Coconut Milk, Chilled Overnight
  • 1 teaspoon Vanilla Extract
  • Additional Toppings: Unsweetened Coconut Flakes And Chopped Pistachios
  • ½ cups Quinoa, Rinsed
  • 1 cup Lite Coconut Milk, Divided
  • 5-⅓ ounces, weight Coconut Greek Yogurt
  • 1 whole Banana, Peeled And Chopped
  • 1 teaspoon Matcha Powder
  • 1 can (13 Oz. Size) Full Fat Coconut Milk, Chilled Overnight
  • 1 teaspoon Vanilla Extract
  • Additional Toppings: Unsweetened Coconut Flakes And Chopped Pistachios

Preparation

For the coconut quinoa: In a small sauce pot stir together the quinoa and ¾ cup of lite coconut milk. Bring to a boil, decrease heat to a simmer, cover and simmer for 15 minutes, stirring occasionally. Remove from heat. Keep in the refrigerator until ready to use.

For the matcha Greek yogurt: In a small bowl stir together the coconut Greek yogurt, chopped banana, and matcha powder until well combined. Keep in the refrigerator until ready to use.

For the coconut whipped cream: Flip the can of chilled coconut milk upside-down. Open the can and pour the water into another container. Save for another use. Place the cream in the bowl of an electric mixer. Mix with a hand blender or a stand-up mixer until it reaches the consistency of whipped cream. Add the vanilla extract and mix until combined. Keep in the refrigerator until ready to use.

To assemble: Split the coconut quinoa into two bowls (or mason jars), then divide the matcha Greek yogurt between the two. Top with coconut whipped cream, coconut flakes and chopped pistachios.

Notes:
1. Everything can be prepared the night before, stored separately in the fridge, and then assembled in the morning!
2. To make this vegan, use almond or coconut yogurt instead of Greek yogurt.
3. If you are not a coconut fan, feel free to use almond milk instead of coconut milk in the quinoa, vanilla or plain Greek yogurt instead of coconut Greek yogurt, and regular whipped cream instead of coconut whipped cream. It will still taste delicious!

Classic Pound Cake with Vanilla

A classic pound cake infused with vanilla.

Ingredients

  • 4 whole Eggs
  • 1 cup Sugar
  • 2 sticks Butter, Room Temperature
  • 1-½ cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Bean Paste
  • 1 pinch Salt

Preparation

Preheat oven to 325 F.

In a mixing bowl using an electric mixer, mix the eggs and sugar until white and fluffy. Gradually add butter, flour, baking powder, vanilla and salt. Mix to combine but don’t over-mix or it will make the cake tough.

Grease a standard 9×5″ loaf pan with Crisco or softened butter and pour batter into pan.

Bake for 55 minutes and test to see if it’s done by sticking in a meat needle or a wooden toothpick to see if any batter sticks to it. If it does then continue baking 5 minutes and check again. If not, then it’s done. Remove from oven. Cool on a rack for 5 minutes before removing from pan.
